On this week's episode of the Eat Green Make Green Podcast, I sit down with Stephanie Kirkpatrick.  Stephanie is the co-founder and woman behind the seitan of Boston's newest (and amazing!) plant-based food truck, Bartleby's.  We talk about life growing up in rural Florida, how a scuba diving trip while traveling opened her eyes to the impact of her food choices, how she made the leap from a corporate job to the food industry, the importance of changing your environment, how she came up with the idea for a seitan food truck, the many challenges of starting a food truck, where the name Bartleby comes from, the Boston vegan food scene, why taste, price, and convenience are the drivers behind consumer choices, and why she just keeps moving forward.  Stephanie is not only a great person, she's a badass female entrepreneur.
